I had a dinner party a few nights ago for 30 people to celebrate Stephanie and Ef being in town.
Some of my favorite cooking challenges are large groups and small kitchens. I made Maple & Beach Sweet Potatoes, Spiced Sweet Chicken with Lime Sauce. Spicy and sweet, everything you love about summer best served with snow on the ground.
More than a few have asked for the recipe, so here it is:
The dish is packed with flavor and very simple to make with almost no prep time.
Three parts (in order of how I make it)
1) Maple & Beach Sweet Potatoes.
Bake a pile of sweet potatoes for about an hour. Cool for a bit then peel the skin off (should slide off) into a pot. Mash up with a few ripe bananas, chopped and roasted jalapeno, honey, maple syrup and cinnamon. Stir in some creme and add a stick of butter. Finish with some salt before serving.
2) Spiced Sweet Chicken.
If you need a quick meal buy chicken tenders or breasts and cut them into three finger thick pieces. Get a giant ziplock bag and fill it with brown sugar, cayenne pepper, maple syrup, olive oil and salt. Mix it around and let sit before adding them side by side packed on a medium to medium high griddle. Increase the heat when you flip them.
3) Lime & Greens Sauce.
In a Cuisinart or blender combine a bunch of parsley, fresh lime juice and a touch of creme.
Put the potatoes on a dish, top it with the chicken and lime sauce. The maple, spice and acid really play nicely off each other.
